everyone loves grilled cheese

As well all know, everyone LOVES grilled cheese. It’s a fast and easy snack that ANYONE can make. And by anyone, i mean myself.

I was thinking about having a grilled cheese the other day, and the thought occurred to me that a grilled cheese shouldn’t be strictly limited to only having CHEESE inside. Usually when i make grilled cheese and i’m feeling a little fancy I’ll add a slice of honey baked ham, however, that’s still just a little too original.

I began scrounging through my refrigirator looking for unusual but complimentary components that i could put in my sandwich. It then occured to me: why not avocado?!

I came up with these ingredients:

Bread ( of course)

Avocado ( of course)

Mozerella Cheese

Pepperoni

This seems like an odd combination, but really it’s kind of like eating a pizza with avocado, without having to make dough and wait for yeast to rise!

I’m sure you all know how to make grilled cheese but let me tell you anyway.

First you take your bread, i prefer wheat, and butter it on both sides. I then face the butter side down on the skillet while my oven is on medium heat.

Next, add a slice of mozerella and a thin slice of pepperoni. You then take thick slices of the avocado and place them on top of the pepperoni. This causes the sandwich to become slightly slippery, however, you just need to remember to put a spatuala on either side of the sandwich when it comes time to flip it over. You then cook until the crispiness of your liking is reached. BAM, your done.

This is probably my favorite recipe so far, because it is so easy to do, and the ingredients compliment each other so well.

 

Quite possibly the best grilled cheese i have ever eaten in my life. Try it ASAP!

One of my part- time jobs is doing event coordinating. It is an amazing college job that i remind myself  I am blessed to have on a daily basis. I want to go in that direction with my career, hopefully working in the event coordinating area of public relations. How does that relate to my avocado blog and obession? Let me tell you.

This past weekend Iworked a wedding that was hosted on a huge ranch just outside of the city I live in. As I am rushing around putting the finishing touches on centerpieces, hanging last minute wreaths, lighting candles, and dripping in sweat I do a double- take at the food table in which i see an abundance of hollowed out avocados. I immidiently wonder what they could be serving to go along with these and I am pleased to tell you that it was ceviche! If you have never had ceviche it is a must have! And if you love avocado it’s an even bigger one!

If you don’t know what ceviche is, its basically a mexican infused recipe that contains shrimp, pico de gallo, green peppers, lime juice, and all those other wonderful flavors. Unfortunately I’m not going to tell you how to make it, but I will tell you that their idea put a new twist on the already amazing recipe. Of course i had a chance to try it and i was pleasently suprised.

This recipe is a great, fun, and filling way to serve your guests weather you host a wedding, party, or any other event that involves food. The guest may simply put one scoop in the hollow part of the avocado, take a spoon, and enjoy! As i ate my serving in the corner and enjoyed the event that i had worked so hard for i thought that this would be a quick and easy recipe to share with you all.

attempt # 2

Well, I have survived attempt number 2 and have made it safely to the comfort of my soft bed in my room to write about it. When I say I “survived” the attempt, i am once again reminding you that the idea of cooking, being in the kitchen, and experiencing the grocery store is FOREIGN to me, therefore, i am scared.

This recipe was not as complicated when it came to preparing as was the macaroni. I decided at the last minute that i would run to the store at 5:00,( which is the worst time to go to the store, I have learned by tagging along with my mom.) My parents were preparing dinner already and I thought I could just “whip” up the salad. The cookbooks always use the word “whip” to make the process sound fast and easy. In my case of course, whip probably wasn’t the best word choice.

I run into H.E.B with a list on my phone that calls for one avocado, red onion, cilantro, lime juice, and of course lettuce and tomato. I rush around and grab all of the ingredients, once again having to search forever for cilantro because i still think it looks exactly like parsley. That of course is due to the lack of experience. Once i find everything, wait in the express lane, (doesn’t make sense because it is express), and drive home i realize i have forgotten the red onion. I am pleased to inform you fellow avocado fanatics, that the salad is still quite delicious without red onion 🙂

Once i get home, i rip up lettuce, slice tomatoes, slice avocado, and prepare to make the cilantro lime dressing which probably took the most time because I didn’t know how to squeeze lime juice out of a lime. It called for:

2 teaspoons of chopped cilantro

2 teaspoons olive oil

The juice of 2 limes

Salt and Pepper to taste

By this point, my family is all in the middle of dinner and i am frantically trying to finish the salad. I “whipped” the ingredient together in a bowl and poured it over the salad. I then walked it over to the table with a huge smile.

Now before i post the pictures of my salad, i will make just a few excuses for the appearance.

If i had an ample amount of time instead of waiting until the last minute, i would have chopped the lettuce and avocado into much neater sectors instead of just throwing it in the bowl. Besides that, the salad was fast and easy to make and that means a lot coming from someone who can’t even pick out a head of cilantro in the grocery store.

So my salad doesn’t look exactly like the pictures, in fact, it kind of looks like a bunch of mush in a bowl. I must say however, my family enjoyed it and ate it along with their meal.  I could tell they liked this recipe much better than the macaroni. This salad really only took me about ten minutes to make and I’m sure that it would take an expert in the ktichen no time at all. It’s an easy way to spice up a regular salad.

The red onions really would have given the salad an extra kick so don’t forget them when you are purchasing your ingredients. My ingredients all together cost about seven dollars!

This recipe is cheap, easy, and flavorful. If i can do it, you can too!

I know most of us are on a similar schedule, and that schedule is having absoultley no time. Admist working, going to school, attempting to keep a social life, and just living life, i often eat whatever is quickest for me to find. Unfortunately this is often whatever greasy drive-thru is open late on my drive home from a long shift.

There is one quick fix that i do like to make if i am in a hurry. This takes almost no time to do, and is a much heathier option than grabbing a burger or fries. You probably have experienced this delicious quick snack before but if you haven’t, your’e missing out.

All you need is

One avocado

Lime

Salt

Hot Sauce

Corn or flour tortilla.

If you think the ingredients sound simple, the preperation is even more so. I like to cut the avocado in half, dispose of the pit, and smash it with a fork until it is turned into guacamole. Once it has done so, i cut half a lime or lemon and let the juice fall on top of my guac. Lemon juice serves two purposes in this case. It helps keeps the avocado from going brown, and it adds a zesty flavor to the guac. I then sprinkle salt on top to taste. The hot sauce part is even more lenient.

In my many times of making this, i have used any hot sauce that is available to me. My dad makes great homemade salsa with our blender, but if that’s not in my reach, i can always use bottled hot sauce such as Cholula or Tabasco. Pour hot sauce on top and put on a corn or flour tortilla. I use corn in my attempt to be more “healthy” but either one works great. With my past experience, corn is less thick, so in return you feel less full. But it is up to you. Avocado contains a lot of good fat that fills you up quickly. This plus the corn or flour tortilla and hot sauce, makes for  a much better option than deep fried chicken or charbroiled hamburgers.

Last night i went out with my friends and got back home around 2 a.m. As I am scrounging around my house and considering a run to taco cabana, i see an avocado. I made this little recipe and went to bed satifsfied. This is a quick and great snack that will fill you up and leave you wanting more. Here’s my simple 5- minute taco.

I firmly believe that sometimes in life you just need to be plain silly. Weather you do something crazy with your friends or make stupid jokes, it needs to be done. I am going to use this theory that I firmly believe in to justify this series of ridiculous pictures that my best friend took of me and one of my favorite things in the world: the avocado.

Besides the fact that this is esentially an avocado photoshoot, keep in mind that i wasn’t joking when i said i really loved them. Also, my friend has a really nice camera that needed to be put to good use.

They say not to judge a book by it’s cover and I’m guessing that also applies to not judging food by how it looks. However, i think we all do that when we see something that looks appetizing.

This dish that i am planning on preparing looks absolutely amazing in the pictures. Based on my first attempt at cooking, i can say that what i cook definently does NOT look as appetizing as what it is supposed to look like, but maybe that’s just due to the fact that i made green macaroni. 

I saw this recipe and thought ” how bad could i mess up a salad?” And that is where this inspiration came from. Everyone loves salad, and the way it makes you feel healthy even if you eat double your weight in it. If your an avocado lover like myself, this garden salad with red onions, tomatoes, avocado, and cilantro lime dressing sounds right up your alley.

 

Here’s what you need to make the salad:

Ingredients:

1 head of lettuce, washed and leaves cut or torn into large pieces

2 tomatoes, sliced or quartered

½ red onion, thinly sliced

1 avocado, sliced or diced

1 tbs finely chopped cilantro

Juice of 2 limes

2 tbs olive oil

Salt and pepper to taste

tableside guac. the closest thing to heaven.

I work two jobs, one of which i am a server at a mexican restaraunt. I have been serving for almost five years now and have come to hate it. I remind myself on a daily basis that I am in college so that I don’t have to wait tables for the rest of my life and deal with customers who are mad that their soup isn’t “hot enough.” With that being said, there are a couple of positive things that I have to say about where I work. We offer awesome drink specials on a daily basis, the food is actually really good, and heres the most exciting part: we offer table side guacamole.

Table side guacamole is one of my greatest pleasures in the world. I often try out different mexican restaurants  and always make sure to ask if they offer it. Most of them, but Pericos Mexican Cuisine here in San Antonio, Texas does. I am proud to say i work for a restaurant that serves it.

Table side guacamole is exactly what is sounds like. Guacamole made right at the side of your table, by your overworked and undertipped server. ( Me.)

Four avocados are put into a large mocajete, with the pits already removed. We put pico de gallo, chopped jalepenos, cilantro, and lime and orange on a plate that we send out on the side by the guac. Once we set the tray down we ask our customers what they would like in the guac. In my opinion, most guac fans would want it all, but there are people who ask us to leave things out. We take the knife and fork that are provided to us and cut the avocado to our customers liking. I always ask if they would prefer their guac “chunky” or “creamy,” and this signifies to the server how we should cut it. Once we have the guac to our customers liking, we add the ingredients they prefer, and squeeze lime and orange juice on top for a little extra flavor.

This guac differs from regular guacamole because it is made right in front of you with the ingredients that you chose. Most guacamoles in restaurants are part avocado, and part some sort of pre-packaged guac, which does not taste like the real thing. This is definitely  the restaurant to order guacamole at, and I’m not just saying that becuase i want your tip. Look it up next time you are cruising in town and are really craving a good old fashioned guacamole to your liking. Oh yes, and if you are a good tipper, make sure to ask for my section 🙂
