I’m not sure if i have previously informed you all, that another reason i started this blog was  in hopes to learn how to cook. I was fortunate enough to be raised in a family who makes homecooked meals on a daily basis, however, i never tried to learn myself.

So before i discuss my own personal experience of making this avocado macaroni with you, let me throw one little statement out there:

i do not know how to cook. however, i am willing to learn.

I started this adventure with a trip up the road to my local HEB supermarket. I realized once i arrived that gathering ingredients that seemed so simple to gather, were in fact, not simple to gather for someone who has never cooked. I am especially not familiar with the produce department, let alone picking out produce on my own.

I ventured over to find the garlic because i need 2 garlic cloves for the recipe. I did not know what garlic even looked like! After i called my dad several times asking him what garlic looked like,  if cilantro must be bought in a bundle, and if all of my items needed to be placed into bags, i proceeded to the checkout and paid only about ten dollars for all the ingredients. I now understand why my parents say it’s cheaper to cook at home.  I usually pay 10 dollars for one meal.

If you are new to cooking, like myself, your ingredients you purcahse are going to look somewhat like this:

Before i made the noodles, i actually made the avocado sauce, because i knew the noodles would cook in no time.

If you are unsure of what your sauce should look like when you are done.. here’s what mine looked like

Yes i know, this looks like regular guac smashed in a blender, but it’s not! This sauce will make your macaroni! I also am going to post a picture of my first batch of noodles ever made! ( Yours should look like this also!)

After the sauce and noodles are done, pour the cheese sauce on top of the noodles as well as the avocado sauce.

My mom and I both agreed that this macaroni is perfect for Halloween time. It looks like one of those dishes you would serve at a Halloween party.

conclusion: You really only need one clove of garlic, and if you aren’t a garlic fanatic, you might not even want to use that because it’s extremely strong.  This dish is supposed to be served hot and don’t forget to add salt and pepper to taste at the end!

My family came into the kitchen to try out my creation. My brother and Dad automatically grabbed the Santitas corn chips from the pantry and begin dipping them in the macaroni. It was funny to watch, i guess it’s just the hispanic side coming out in my family, but the pasta actually tastes sort of like a dip. It’s whatever floats your boat. Heres a picture of the odd combination.

not just mac and cheese: AVOCADO mac and cheese

you heard right: avocado mac and cheese.

Being a typical American, most of us grew up with that side of macaroni plopped right beside whatever it was that was served for dinner. So since you have grown up with the same mainstream yellow/orangish macaroni, it’s time to switch it up and try this avocado infused stovetop mac and cheese.

Here is what you need for this delicious creation:

  • 10 ounces dry elbow macaroni
  • 2 cloves garlic ( minced)
  • 2 avocados
  • 2 tablespoons fresh lime juice
  • 1/3 cup chopped fresh cilantro
  • salt and pepper
  • 2 tablespoons butter
  • 2 tablespoons all purpose flour
  • 1 cup milk
  • 2 cups shredded pepper jack cheese ( for those of us that don’t like that, use Monterey)

 

And here’s how to make it:

  1. Salt water in a large pot and bring to boil. Add macaroni and cook from 8- 10 minutes
  2. Make avocado sauce while pasta cooks by placing garlic, lime juice, avocados, salt and pepper, and cilantro in a blender or food processor, and blend until smooth and creamy
  3. To make the cheese sauce, place butter in a small sauce pan and heat under medium heat. Whisk in flour after butter is melted to create a paste and whisk in milk until paste is smooth. Stir with a wooden spoon as sauce begins to thicken, and then add pepper jack cheese until sauce becomes creamy,
  4. Pour cooked macaroni into a bowl, and pour avocado sauce over until well coated. Add cheese sauce and stir until macaroni is creamy. Add salt and pepper and if that’s still not enough avocado for you, (which it isn’t for me), garnish the top with avocado cubes.

lime juice is not necessarily needed, but does help from preventing the avocado to brown.

As i kicked back on my soft bed with a pint of coffee ice cream and a good ol’ cosmopolitan ( magazine, that is), i couldn’t help but to stop on the page with the list of  what cosmo likes to call ” SEXY FOODS“. Of course, being a woman, anything involving  “flat belly diets” or ” abs in 5 mintues” catches my eye, and this was no exception. As i scrolled down the list i was pleased to find things i often enjoy such as blueberries, peaches, and coffee, ( thank you, college). Amist the others, avocado was named one of the “sexy foods”. I read on and found many health benefits that avocado provides.

So before i start experimenting with recipes, or experimenting with cooking in general, i decided to list some health factors that pertain to avocado, that way when i cook these recipes, you can remind youself of why you are sexy 🙂

  • Nutrionally dense
  • Contain vitamins C,D,E and K
  • Good source of fiber and potassium
  • Heart Healthy food
  • Benefical in hair growth and strength
  • 15 grams of heart-healthy unsaturated fat
  • Help lower cholesteral
  • High in oleic acid, which helps prevent breast cancer
  • etc, etc.

fun facts: every superbowl americans eat about 8 million pounds of  guac, and for cinco de mayo, the count is close to 14 million.
